Would it be possible to classify turn messages (E.G It's x's turn) as table message as opposed to game message?
That way activating "interrupt speech" on game messages would allow us to hear the last card played rather than player's turn and would make life much easier in most games. It can have the additional benefit of being able to follow turns outside the Playroom window when table messages are set to always read.

Right now, no, it isn't possible to change message classification so easily, sorry.
However, with client 3.0, that's maybe well the time to discuss message classification in general. Any changes wouldn't be immediate as it's still quite some work, but nobody ever talked about it since 2.0 release 7-8 years ago.
AS a reminder, the different kind of messages are:
System messages, such as reboot or other important global notifications
Notifications, where you will find things for which you have to quickly answer/react; for example "it's your turn".
Game messages, where effectively you have turn indications as well as who does what in a gams (ccurently undifferencied)
Table message, telling who comes and leave your table
Public chat messages
Private chat messages
Friend-related messages, such as connections/disconnections, acceptation/requests, etc.
Other messages, where you can for example find table creations while you aren't in a table with a game in progress
